Piri piri

Description: The Portuguese were the first traders to settle in Gambia and with them they brought a Portuguese condiment called piri piri. It soon became popular throughout most of West Africa. Piri piri is extremely hot and spicy an dis added to many foods to enhance their flavor.

Yields: 1 cup

Ingredients:
  • 8 red hot chili peppers, trimmed, seeded, finely chopped
  • 0.5 cup fresh lemon juice
  • 1 tablespoon cilantro, freshly chopped
  • 1 tablespoon parsley, trimmed, finely chopped
  • 0.5 cup olive oil
  • 2 garlic cloves, trimmed, peeled, minced
  • Equipment: blender or mortar and pestle; rubber spatula; small bowl
Instructions:
  1. Combine chilies, lemon juice, cilantro, parsley, and garlic in blender and puree until smooth. With blender on low, slowly add olive oil. Blend until smooth. Remove from blender with spatula and place in small bowl.
  2. Serve as condiment with seafood, chicken, or meat.
